My Future Career
You are in a room. As you look around
this room, you see several items such as rocking chairs, diapers,
heating lamps, and fetal monitors. All of these items lead you to one
conclusion; you are in a hospital nursery. After I graduate high
school, I plan to attend Motlow State Community College to become a
Registered Nurse with a specialty in the fetal department.
The fetal department of the hospital is
the area where well newborn babies are kept. In this department, there
are several Registered Nurses. These nurses monitor the vital signs of
newborns and ensure that the newborns are healthy.
Like every other profession, a college degree is required. Registered
Nurses usually hold an Associate’s or a Bachelor’s
degree. I plan to attend Motlow State Community College to pursue an
Associate’s degree. Motlow has a two-year intense nursing
program that prepares you for your NCLEX exam. This is a state board
exam, and upon passing this exam you earn the title Registered Nurse.
By obtaining this degree and passing the NCLEX exam, I will then be
eligible to fill out applications at hospitals.
If everything goes as I have planned,
right out of high school, I will start at Motlow. After completing two
years of Motlow’s intense nursing program, I will hold an
Associate’s degree. Lastly, I will take my NCLEX exam and
then put in an application at Middle Tennessee Medical Center in hopes
of getting a job in the fetal department.
When I Grow Up
When I grow up I want to own a boutique. I would make one side of the store where you can do pottery and make arts and crafts. The other side of the store I would sell jewelry, purses, and all kinds of cute hair accessories. I would call it "Blooming Boutique." The store wold be very colorful! I would decorate it by using stripes and polka dots. I would have late hours, so it would be convenient for the customers. I would have birthday parties, so kids can make their own pottery and arts and crafts. I'll have on-line shopping and special orders available. I hope everyone will come to my boutique and love it!
I Want to be a Ballet and Hip-hop Dancer
I want to be a ballet and hip-hop dancer when I grow up. I love to dance because it gets me exercise and it's a lot of fun. I also want to own my own dance studio. Dancing makes me happy and I want to make other kids happy too.
August Contest: Backyard BBQ Recipe Contest
Butternut Squash Soup
- Complete Recipe -
Ingredients:
- One Butternut Squash, halved lengthwise and seeds
removed
- Three tablespoons butter
- One small onion, chopped
- One can chicken broth
- Dash of nutmeg
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup sour cream
- 4 slices bacon,fried crisp and crumbled
- 2 tablespoons chives, optional
Preheat oven to 350 degrees. Place the squash,cut side down, on a
baking sheet until tender, about 40 minutes. Let cool slightly. Scrape
the squash away from the skin.
In a saucepan, melt the butter over low heat. Add the onions, stirring
occasionally until tender. Add nutmeg.
Stir in the squash and broth. Simmer over low heat for 20
minutes. in a blender or food processor, puree until smooth.
Put the soup back into the pan and season with salt and pepper.
To serve, ladle into soup bowls, top with sour cream,sprinkle with
crumbled bacon and chives if you like. Enjoy!!

Grilled Chicken Breast Stuffed with Portobello Mushrooms and Provolone Cheese
- Complete Recipe -
Ingredients:
- Italian Dressing
- Onion
- Garlic
- Apple Juice
- Fillet Chicken Breast
- Portobello Mushroom
- Provolone Cheese
- Butter
- Olive Oil
- Course Ground Salt
- Course ground Pepper
Marinate fillet chicken breast four hours in Italian Dressing
After marinating, put fillet of chicken breast flat on cutting board and slice horizontally from one side leaving all edges in tact except for the edge you cut from to make a pocket.
Cube and Sautee Portobello mushroom in a skillet with butter, rosemary, apple juice, garlic, and onion. Cook Al dente” Use the following steps:
Melt butter in skillet on medium heat
Add onion and garlic and cook until onion is clear
Add apple juice
Cook until juice reduces
Add mushroom and cook until al dente”.
Retain apple juice reduction for later use.
Let cool.
Finely grate provolone cheese and set aside
Mix cheese and most of the mushroom sauté together in bowl.
Take pocketed chicken breast and fill with cheese and mushroom mixture
Tie chicken breast closed with string so no melted cheese will escape.
Brush chicken breast with extra virgin olive oil both sides
Apply generously course ground salt and pepper
Grill is preheated high temp
Place breast on grill then reduce to med low heat
Turn over in approximately 8 minutes
Turn grill down to low heat
Cook on this side about 8 minutes as well
While breast is grilling brush with olive oil
Also while the breast is grilling reheat apple juice reduction with left over mushroom cubes
Remove chicken breast from grill, sprinkle grated cheese on top and cover with reduced juice and mushroom sauté

Broccoli Salad
(1)
- 2 bunches broccoli flowerets, cut into small pieces
- 1 cup peanuts
- 1 cup raisins
- 8 pieces crisp bacon - crumbled (optional)
- Grated onion , to taste
(2) (Dressing)
- 1/4 red wine vinegar
- 1/2 cup sugar
- 1 cup mayonnaise
Toss together part 1.
Add together for the dressing part 2. Mix all together right before
serving.
You may not want to use all the dressing. It will kept in the
refrigerator for several days.
